Description

Chunky Monkey Overnight Oats combine creamy peanut butter, ripe banana, rich cocoa, and chocolate chips for a healthy make-ahead breakfast that tastes like dessert but fuels your morning the right way.


Ingredients

Scale

1/2 cup old-fashioned rolled oats

1/2 cup unsweetened almond milk (or milk of choice)

1 tablespoon chia seeds

1 tablespoon natural peanut butter

1/2 tablespoon unsweetened cocoa powder

1/2 ripe banana, mashed

1 tablespoon dark chocolate chips

1 tablespoon chopped walnuts

1 teaspoon maple syrup (optional)

1/4 teaspoon vanilla extract

Pinch of sea salt


Instructions

1. Add oats, chia seeds, cocoa powder, and salt to a mason jar or airtight container. Stir to combine.

2. Add almond milk, mashed banana, peanut butter, maple syrup, and vanilla extract. Mix thoroughly until smooth.

3. Fold in chocolate chips and chopped walnuts.

4. Seal the jar and refrigerate overnight or for at least 4 hours.

5. In the morning, stir well. Add a splash of milk if needed for desired consistency.

6. Top with extra banana slices, walnuts, and chocolate chips before serving.

Notes

Use certified gluten-free oats if needed.

For extra protein, stir in 1 scoop of chocolate or vanilla protein powder.

Store in the refrigerator for up to 4 days.

Swap peanut butter for almond butter if preferred.

For a vegan option, use dairy-free chocolate chips.
