Ingredients
¾ cup tomato puree
1 ¼ cup unsweetened almond milk
1 ½ cup steel cut oats
2 tablespoons extra virgin olive oil
¼ cup fresh basil, finely chopped
1 garlic clove
Salt and pepper to taste
2 tbsp parmesan cheese, grated
Instructions
1. In a pot, add olive oil and sauté garlic on low-medium heat.
2. Once garlic becomes fragrant and slightly golden, add almond milk and tomato puree.
3. Bring the mixture to a gentle boil while stirring.
4. Add steel cut oats and chopped basil, then reduce heat to low.
5. Let it simmer for about 60 minutes or until most liquid is absorbed.
6. Season with salt and pepper to taste.
7. Transfer to jars or containers and chill overnight.
8. Before serving, reheat gently and top with grated parmesan.
Notes
Make this vegan by omitting the parmesan or using a plant-based alternative.
