Description

These creamy pistachio overnight oats are a flavorful, protein-rich breakfast made with real pistachio butter, rolled oats, maple syrup, and thick yogurt. It’s a make-ahead recipe perfect for busy mornings.


Ingredients

1/2 cup rolled oats

1/2 cup oat milk (or any milk)

1 tbsp pistachio butter

1 tbsp maple syrup

1/4 cup thick Greek or non-dairy yogurt

1/4 tsp vanilla extract

Pinch of salt

Toppings: crushed pistachios, cacao nibs, fruit, maple drizzle


Instructions

  1. In a small bowl or jar, combine oats, pistachio butter, milk, yogurt, maple syrup, vanilla, and a pinch of salt.
  2. Stir well until fully mixed and smooth.
  3. Seal and refrigerate for at least 6 hours or overnight.

Notes
