Ingredients
1/2 cup old-fashioned rolled oats
1/2 cup unsweetened almond milk (or milk of choice)
1/2 ripe banana, mashed (plus extra slices for topping)
2 tablespoons natural creamy peanut butter (plus extra for topping)
1 tablespoon chia seeds
3 tablespoons plain Greek yogurt
1 teaspoon maple syrup or honey (optional)
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
Pinch of sea salt
Toppings: banana slices, peanut butter drizzle, chopped peanuts, granola
Instructions
1. In a mason jar or airtight container, mash the ripe banana until smooth.
2. Add peanut butter, Greek yogurt, almond milk, maple syrup, vanilla extract, cinnamon, and salt. Mix well until creamy and smooth.
3. Stir in the rolled oats and chia seeds until fully combined.
4. Cover and refrigerate overnight or for at least 4 hours.
5. In the morning, stir the oats well. Add a splash of milk if needed to loosen the consistency.
6. Top with fresh banana slices, a drizzle of peanut butter, and chopped peanuts just before serving.
7. Enjoy cold straight from the jar or warm up in the microwave for 1–2 minutes.
