Classic and elegant Vanilla Almond Overnight Oats made with real vanilla bean, creamy almond butter, and crunchy almonds. This simple, wholesome breakfast is naturally sweetened with honey. Perfect for busy mornings!
Ingredients
1/2 cup rolled oats
1/2 cup almond milk
1 tbsp almond butter
1 tbsp honey
1 tbsp Greek yogurt
1/2 tsp vanilla extract
1/4 vanilla bean, scraped (or 1/4 tsp vanilla bean paste)
1 tsp chia seeds
2 tbsp sliced almonds
Optional toppings: extra almond butter, honey drizzle, fresh berries
Instructions
1. Scrape seeds from vanilla bean pod with a knife.
2. In a jar, combine oats, almond milk, almond butter, honey, Greek yogurt, vanilla extract, vanilla bean seeds, and chia seeds.
3. Stir thoroughly until almond butter is well incorporated.
4. Cover and refrigerate overnight or at least 4 hours.
5. Before serving, top with sliced almonds and drizzle with honey.
6. Add extra almond butter swirl and fresh berries if desired.
Notes
Can use vanilla bean paste instead of fresh vanilla bean.
Toast sliced almonds for extra crunch and flavor.
Use creamy almond butter for smoothest texture.
Add a pinch of salt to enhance vanilla flavor.
