Bright and refreshing vegan lemon poppy seed overnight oats with citrus flavor and plant-based creaminess.
Ingredients
1/2 cup rolled oats
1/2 cup almond milk
1 tbsp chia seeds
1 tbsp maple syrup
1 tbsp poppy seeds
1 tsp lemon zest
1 tbsp lemon juice
1 tbsp coconut yogurt
Instructions
1. Add oats, almond milk, chia seeds, and maple syrup to a jar.
2. Stir until well combined.
3. Add poppy seeds, lemon zest, and lemon juice.
4. Mix again until evenly distributed.
5. Refrigerate overnight and stir before serving.
Notes
Top with sliced almonds or coconut flakes.
Use any plant milk you prefer.
Store up to 3 days refrigerated.
